Ingredients
brinjal | 1/4 kg |
tomatoes | 1/4 kg |
onion | 1 |
green chillies | 5 |
ginger garlic paste | 1 spoon |
turmeric | 1/4 spoon |
salt | to taste |
red chilli powder | 1 spoon |
coriander leaves | some |
oil | 2 spoons |
Method
wash brinjal and tomatoes with plenty of water.soak in salt water for 30 minutes.
cut brinjal and tomatoes into pieces.
if brinjal is small size cut into 4 pieces.if it is medium one cut into 8 pieces.put brinjal pieces in salt water.
cut tomatoes into 5 to 6 pieces.
wash onions and green chillies .
cut onions and green chillies into small pieces.
1.add oil in a pan.
2.after heating the oil add onion and green chillie pieces and fry for 5 minutes.
3.when onion pieces turn into golden colour add ginger garlic paste.
4.fry for 2 minutes.
5.strain brinjal pieces from water.
6.add brinjal pieces.immediately add turmeric and salt after adding brinjal pieces.
7.if not added turmeric and salt immediately, taste of brinjal pieces may change.
8.cook for 5 minutes.
9.then add tomato pieces and red chilli powder.
10.mix all very well.
11. in preparing any curry with brinjal do not mix continiously or many times like other curries because brinjal pieces are very tender .they can easily become paste if we mix more times.
12.you can move the pan instead of mixing with spatula .
13.cook for 5 to 10 minutes.
14.when brinjal and tomatoes are cooked add 1/2 cup of water.
15.cook for another 2 minutes.taste salt and spicy is enough or not.
16.finally add coriander leaves and put off the flame.
