Ingredients
ginger | 100 grs |
green chillies | 25grs |
tamarind flakes | 25grs |
sugar | 25 grs |
salt | to taste |
cumin seeds | 1 spoon |
oil | 2 spoon |
mustard seeds | 1/4 spoon |
urad dal | 1/4 spoon |
curry leaves | some |
Method
soak ginger in salt water for 20 minutes to remove bacteria.
soak tamarind in 1 cup of water .add sugar also.after 10 minutes boil this water.when water is boiling put off the flame .keep it aside.
1.peel the ginger and cut into medium size pieces.
2.cut green chillies into 2 pieces.
3.add oil in a pan
4.after heating the oil add green chillies and fry for 3 minutes.
5.after frying of green chillies keep them aside.
6.add ginger pieces and fry them.it will take 5 to 10 minutes in medium flame.
7.after frying of ginger add this in mixie jar .add salt,cumin seeds,tamarind with water,garlic cloves,fried green chillies and blend it.
8.add 1/2 spoon of oil in a pan.
9.after heating the oil add mustard seeds.
10.when mustard seeds started to crackle add urad dal.
11.fry urad dal till it become light golden colour.finally add curry leaves and put off the flame.
add this in blended mixture.taste the chutney if salt and sweet enough or not.
12.if not add more salt and sugar and mix well.
13.this is chutney in green colour because we used only green chillies instead of red chillies .you can prepare this chutney with red chillies also.
