Lady finger with coconut fry

Lady finger is one of the best vegetable that gives good  health to every part of our body.Eating lady finger can control many health problems.We should take okra in our diet as in the form of curry or fry or any other vegetable combination. Lady finger(okra) fry is very famous recipe. In any special occassions or wedding functions okra should place first in meal chart especially in  andhra bhojanams. The combination of coconut and adding cashew nuts gives editional taste to the recipe. 


Ingredients


lady finger  1/4 kg
onion 1
green chillies 4
coconut (grated) 1/2cup
oil 2 spoons
mustard seeds 1/4 spoon
cumin seeds 1/4 spoon
urad dal 1/4 spoon
cashew nut 10
dry chilli 2
curry leaves few
turmeric pinch
salt to taste
red chilli powder 1 spoon

Preparation

wash the lady fingers with water. soak  them in salt water for 15 minutes.
wash onions and green chillies with water.
cut onions and green chillies into small pieces.
wipe the lady finger with cotton cloth .and cut into small round pieces.
spread this pieces on cotton cloth or dry the lady finger pieces in sun shade for 30 minutes.
wash the coconut pieces and grate it .keep it aside.

Method

1.Take the pan.put on  the stove.
2.Add oil in the pan.after heating the oil  add mustard seeds.
3.When mustard seeds started to crackle add cumin seeds and dry chillies.
4.Add urad dal .fry it  till urad dal become to light golden colour.
5.Then add cashew nuts(optional) and fry for 2 minutes.
6.when cashew nuts also getting light golden colour add curry leaves.
7.After adding the curry leaves add onions and green chillies pieces.fry them for 5 minutes.
8.When onions are fried add dried lady finger pieces and fry for 10 minutes in low flame.do not put lid. 
9.add turmeric and mix the fry. do not add salt at now.
10.when lady finger pieces become to colour change(semi fried) then add salt and red chilli powder. mix all very well and fry for 5 minutes.
11.finally add grated coconut and mix all very well and fry for 2  minutes.put off the flame.
12.south indian okra coconut fry is ready to taste.

Keep in the mind

Do not put the lid when you fring the ladies finger.because keeping the lid not allow the steam to go out.Then okra pieces become so gummy. then fry become so sticky.
Lady finger has some gummy nature.To remove  after washing the lady fingers  wipe them and put the pieces in sun shade .
Do not add the salt immediatly after adding the lady finger pieces. because salt has the property to  take out the  water from vegetable.If we add salt with out frying the  lady finger then fry become watery and sticky.
