Ingredients
all purpose flour(maida) | 1 cup |
rice flour | 1 spoon |
ghee | 4 spoons |
salt | pinch |
baking soda | pinch |
oil | to fry |
sugar | 1 cup |
water | 1/2 cup |
Method
1.add maida ,salt ,baking soda in a mixing bowl.
2.add ghee and mix all very well.
3.then add some water(4 to 5 spoons)and make a dough like chapati dough.
4.cover with wet cloth and keep it for 1 hour.
5.add sugar and water in a vessel and boil till sugar is dissolved in water.boil for another 3 minutes.
6.sugar syrup should be like julab jamun sugar syrup.
7.add elachi and 1 spoon sugr in a mixie jar.make a powder.
8.add this elachi powder in sugar syrup.put off the flame.
9. after one hour make a big and thin chapati with maida dough.
10.spread ghee allover the chapti layer and sprinkle some rice flour over spreaded ghee.
11.and roll the chapti.when rolling the chapati donot allow any gaps between layer.
12.after completing to roll chapati cut in 1 inche pieces.cut carefully other wise layers may be breaked up.
13.press each piece gently with thumb.
14.add oil in frying pan.
15.after heating the oil add kajas and fry in medium flame.donot put high flame that may be changes colour immediatly without fry kajas properly.
16.when golden colour coming add this kajas in luke warm sugar syrup.
17.here remember one thing sugar syrup should be in lukewarm.not very hot.
18.hot kajas should observe completly in warm sugar syrup only.
19.in any sweet preparation sugar syrup is very important.
20.so preparing kaja should use warm sugar syrup.
21.keep kaja in sugar syrup for 30 minutes.
22. after that enjoy the taste of kajas.
