This is very simple and easy chutney.In andhra there is one common habbit while eating at the meal time.First they started to eat rice with pickle or chutney adding with ghee.That taste is really delicious.After that they like to taste the dals or other curries.So preferance of chutney/pickle is main in andhra menu.Cucumber tomato chutney is mixing up with three vegetables that gives many nutrientional values.This chutney is famous in south indian especially in andhra.
Ingredients
cucumber | 1/4 kg |
tomato | 2 |
brinjal | 5 |
green chillies | 150 grs |
garlic cloves | 10 |
cumin seeds | 1 spoon |
salt | to taste |
oil | 3 spoons |
mustard seeds | 1/4 spoon |
urad dal | 1/4 spoon |
curry leaves | few |
tamarind | 3 flakes |
Preparation
wash the vegetables(cucumber,tomato,brinjal ,green chillies) with water.Then put all vegetables in salt water(crystal salt) for 15 minutes.
Peel the cucumber and cut into small pieces(not very small).
Cut the tomatoes into 5 to 6 pieces.
Cut green chillies into 2 pieces.
Cut brinjals also medium size pieces.put these brinjal pieces in salt water till using in the chutney.
There is no need to cut the vegetables into small pieces because after cooking these vegetables we can make a paste.
Remove upper layer of garlic cloves.
Method
2.After heating the oil add green chillies and fry for 3 minutes in low or medium flame.
3.After frying the green chillies keep them aside(add into a mixie jar).
4.add tomatoes and brinjal and fry for 2 minutes.After that add tamarind flakes.
5.when tomatoes and brinjals are semicooked add cucumber pieces and cook for 2 minutes.
6.Then put off the stove.
7.add all cooked vegetable pieces,tamarind ,salt,cumin seeds,garlic cloves and fried green chilli pieces in mixie jar and make a paste.
8.taste the chutney for salt is enough or not .If not ,add more salt.
9.put a pan on the stove.add oil .
10.after heating the oil add mustard seeds.
11.when mustard seeds are started to crackle add urad dal.fry for 1 minute.
12.After urad dal is become to golden colour then add curry leaves.put off the flame.
14.Add these seasoning to the chutney.mix all very well.
15.famous andhra dosakaya tomato pachchadi is ready....
Keep in the mind
When we cut the cucumber we should taste it.Both cucumber piece and cucumber seeds also we should taste because some cucumbers have bitterness taste.Some times cucumber pieces is not bitter but cucumber seeds have the nature of bitterness.So if we add cucumber pieces with out tasting it ,the recipe may be become bitter.
For preparation of chutney semi cooked vegetables are enough.In cucumber chutney cucumber is not cooked too tender.The taste of the chutney may be changed if cucumber cooked like curry.
Do not add riped cucumber.It can chages the taste of the chutney.
