Spicy bitter gourd

bitter fry

Ingredients

Bitter gourd 1/4 kg
salt to taste
oil 3 spoons
dry chillies 4
urad dal 4 spoons
chana dal 4 spoons
cumin seeds 2 spoons
garlic cloves 8
dry coconut  1/4 cup


Method

clean bitter gourd
1. peel rough surface of bitter gourd and wash with water then cut 2     inches (not deeply) in the middle of bitter gourd.smear with salt
2.do all  bitter gourds like this.keep them aside for nearly 30 to 40      minutes.this process is helpful for remove bitterness in bitter            gourd.
3.after 30 minutes bitter gourd become  soft because of salt .salt          removes bitterness in the form of water.so squeeze bitter gourd to    remove salt and bitter water which is coming from it.
4. put in the water then once again squeeze firmly.keep them aside.
5.add oil(1 spoon) in a pan .
6.after heating the oil add dry chillies and fry them.keep them aside.
7.add urad dal and chana  dals and fry until they become light golden colour.put off the flame.
8.cut dry coconut into small pieces.
9.add coconut pieces,fried dry chillies,urad dal,chana dal,cumin seeds,garlic and salt into mixie jar make a powder.
10.add oil(remaining 2 spoons) in a pan.
11.after heating the oil add squeezed bitter gourds and fry for some time.
12.this is not deep fry .
13. put the flame in low or medium.turn bitter gourds if one side is fried.
14.when bitter gourd is frying in the oil if you press the bitter gourd edges the water is coming from it (making some sound).
15. if you press the bitter gourd,then the sound is not coming that is sign bitter gourd is fried.put all fried bitter gourd in a plate.
16.remove seeds from bitter gourd(if you donot like seeds).
stuff  bitter gourd with fried powder .
17.remaining powder sprinkle over the fried bitter gourds.
18.spread all stuffed bitter gourd in a pan and in low flame fry for 1 minute .
19.if you add 1 spoon in this time the powder become wet and give  more taste.

Cluster beans fry

Ingredients

cluster beans 1/4 kg
onion 1
green chillies 2
oil 2 spoons
mustard seeds 1/4 spoon
cumin seeds 1 spoon
urad dal 1/4 spoon
chana dal 1/4 spoon
dry chillies 2
curry leaves some
garlic cloves 10
turmeic pinch
salt  to taste
red chillie powder 1 spoon
grated coconut 1/2 cup

Method

clean vegetables
chopped onions and green chillies into small pieces.
1.cut cluster beans into inch size pieces.
2.add 1/2 cup of water and some salt. boil for some time.
3.when cluster bean pieces became soft put off the flame.strain them.keep it aside.
4.add oil in a pan.
5.after heating the oil add mustard seeds.
6.when mustard seeds starts crackling add cumin seeds and dry chilles.
7.after that add urad dal and chana dal.fry until dals become light brown colour.
8.add curry leaves.
9.add finely chopped onions and green chillies.
10.fry until onion pieces become light golden colour.
11.then add boiled cluster beans.
12.add turmeric and salt and fry for some time.
13.add red chillie powder ,cumin seeds(1 spoon) and garlic cloves in a mixie jar and make a powder .donot add water.because of garlic this powder looks like paste.but do not need to add water.
14. add this powder  into curry and stir very well . and cook for 10 to 15 minutes.
15.add grated coconut and stir the curry and fry for 2 minutes then put off the flame.

Ridge gourd tomato chutney

Ingredients

ridge gourd            2 medium size
tomatoes                2
green chillies         15
cumin seeds           1/2 spoon
garlic cloves          10
salt                         to taste
tamarind                2 flakes
oil                          3 spoons
mustard seeds        1/4 spoon
urad dal or 
chana dal               1/2 spoon
curry leaves           some
coriander leaves    some          
Method

clean the vegetables

cut green chillies into two pieces.donot need to cut any vegetable  into small pieces  for chutnies not like curry preparation.because we will grind this pieces. so cut green chillies  into  2 pieces for fry.
cut tomatoes into 4 or 5 pieces.
peel ridge gourd and wash them and cut into medium size pieces.
before cutting the pieces taste one piece of ridge gourd  because  some ridge gourds have bitter nature.if you add that ridge gourd in the chutney or curry became bitter taste.so donot forget to taste while cutting the ridge gourd and cucumber also.

1.heat the oil(2 spoons) in a pan.
2.after heating the oil add green chillies. and fry for 2 to 3 minutes.
 show alert when frying green chillies because they have the splutter  nature and jump off from oil if not cut them properly.for avoid this you can put lid  when frying the green chillies.
3.after frying the green chillies keep them aside.
4.add ridge gourd and tamarind  in the same oil and cook for some time.
5.when tamarind become soft take it out from the ridge gourd pieces .
6. add tomato pieces and cook for 15 to 20 minutes.put off the flame when the tomatoes is semi cooked.
7.put fryied green chillies ,salt ,cumin seeds,garlic cloves and tamarind in a mixie jar .and blend them.make a fine paste.do not add   water.
8.add ridge gourd pieces and tomato pieces in the paste of green chillies and only blend for 10 seconds.not crushed them completly .
9.add oil(1 spoon) in a pan.
10.after heating the oil add mustard seeds .when they began to splutter add urad dal or chana dal .fry until dal become light brown colour.
11. then add curry leaves  and coriander leaves.
12.add them into ridge gourd chutney.mix them. taste it .if you want more  salt  add it.
