KFC Type Fried Chicken Preparation

This name is very famous for every one who loves non veg recipes. Kfc fried chicken is crunchy in out side and juicy in inside.Marination is very important for get best taste like restaurant style.It is not instant preparing recipe because marination can take much time.So we have to wait for some time for having crunchy chicken fry....Oats or corn flakes can add to the flours.Dry bread crumbs is need to make crispy fry. we cut  Chicken leg pieces or medium size pieces ...



Ingredients



chicken 250 grs
oil for deep fry
salt to taste
pepper powder 1 spoon
turmeric  pinch
corn flour 2 spoons
maida 1 cup
oats 5 spoons
garam masala 1 spoon
red chilli powder 1 spoon
egg 1
coriander powder 1/2 spoon
cumin powder 1/4 spoon
bread crumbs powder 1 cup
curd 1 cup



Preparation



  • Wash chicken pieces and put this chicken pieces in a bowl.
  • Add some water that fully dipped the chicken pieces and some salt(1/2 spoon)
  • Keep this bowl in a fridge for 4 hours.
  • After that drain the water completely and add this chicken pieces in a big mixing bowl.
  • Add salt,ginger garlic paste,lemon juice,garam masala,curd, and coriander powder and mix all well.
  • Then keep to marinate this chicken pieces for 2hour.
  • For best result keep this   marinate chicken in the fridge for overnight.
  • Take a bowl and beat egg and add some water( 5 spoons )or 5 spoons of milk and mix well.add pinch of salt and mix well.
  • Take another bowl and add  maida, corn flour,salt,red chili power,oats,cumin powder,pepper powder and bread crumbs  and mix all well.
  • Dump the chicken pieces in this bread crumbs mixture and put these pieces in a plate.




Method


  • Take a pan put on the flame.
  • Add oil for deep fry when pan is heated.
  • When oil is heated put the flame in low and add dumped chicken pieces to the oil and fry for 5 to 6 minutes in low or  medium flame.
  • After that remove the chicken pieces from the oil.
  • Keep to cool them.
  • After that dip this chicken pieces in beaten egg mixture.
  • Dip this chicken pieces in bread crumbs mixture once again.
  • Place this pieces to the oil and fry again.
  • This will gives the crispyness to the chicken pieces.
  • Fry until chicken pieces become nice golden colour and remove from the oil and put on the paper napkin for absorb excess of oil.
  • Tasty KFC chicken is ready to eat.....




Keep in the mind


Marination is most important for juicy and crispy chicken fry...
Medium size chicken pieces or leg pieces can take for fry.
Adding masala powder quantity is depend upon your taste...
More salt is not require to this fry.

Andhra style Prawns shallow Fry

Most of the people who loves non veg recipes would like to eat prawns varieties. Because of health conscious many people avoiding to take  oily food.This fry is shalow fry not deep fry.Preparation also very easy.Children likes to eat this fry as snack variety.

Ingredients



prawns 1/2 kg
onion 1
green chillies 4
ginger garlic paste 1 spoon
salt to taste
red chilli powder 1 spoon
turmeric 1/4 spoon
coriander powder 1/2 spoon
garam masala 1/2 spoon
coriander leaves few
oil 4 spoons
curry  leaves few


Preparation


Wash onions ,green chillies,curry leaves and coriander leaves.
Chopped coriander leaves and keep aside.
Cut onions and green chillies into small pieces.
Make ginger garlic paste.
Make garam masala and coriander powder. Take a bowl and add 2 spoons of crystal salt, 1 spoon of turmeric and prawns .
Mix all well for removing smell from the prawns.
Then wash this prawns 3 to 4 times with water and after that drain  the water completely.



Method



Take a vessel add cleaned prawns,turmeric,salt,red chilli powder and ginger garlic paste and mix all well.
Put this vessel on the flame.flame should be in sim.
No need to add water.
After some time water is coming from the prawns.cook until water completely evaporated.Put off the flame.

Take a pan and put on the flame.
Add oil when pan is heated.
When oil is heated add curry leaves.fry for  nearly 30 seconds.Remove from oil and keep on a plate.
Add onions and green chilli pieces and fry until onions become to light golden colour.
Then add cooked prawns and add coriander powder and garam masala and mix well and  fry for 5 minutes.
Taste the fry if salt and spicyness enough or not.
If not ,add some more salt and garam masala and finally add  finely chopped coriander leaves(option).
Add  fried curry leaves and put off the flame.
prawns shalow fry is ready to eat .....Enjoy!


Keep in the mind


When cooking the prawns or any non veg varities do not put the flame high.Cook in low flame is best for health.
Adding fried cashew nuts also increases the taste of the fry.

Crispy Ladies Finger Fry

Lady finger is very famous vegetable in india especially in andhra it is  placed one of the dish on  meal plate for any occasion.We can prepare many recipes with ladies finger.But Most of the people like to eat lady finger fry.We can add grated coconut or cashew nuts as per our wish.Do not worry if these are not at the time of fry.With out them,  fry also yummy.... 


Ingredients


Ladyfingers       250 grs
Green chillies       5
Oil                           for deep fry
Mustard seeds      1/4 spoon
Dry chillies            2
Cumin seeds          1/4 spoon
Chana dal                1/2 spoon
Ground nuts            1/4 cup
Curry leaves             few
Turmeric                  1/4 spoon
Salt                             to taste
Red chilli powder    1/2 spoon
Garlic                       5 cloves


Preparation


Wash the vegetable  ladyfingers with water.  Each ladyfinger should be wipe with cotton cloth or paper napkin. Then spread 
over on cotton cloth for 20 to 30 minutes for remove dryness.
Then cut them into small round size pieces.
Remove upper layer of the garlic.
wash curry leaves and keep aside.
Cut green chillies into 2 pieces or split them in the middle of the chilli.


Method


1.Take a thickened bottom vessel or pan and put on the flame.
2.Add oil for deep fry when pan is heated.
3.Add  some lady finger pieces when oil is hot.
4.Fry them till they become to dark colour or changing their colour then take them out and keep on the paper napkin for absorb excess of oil.
5.Fry all lady finger pieces like this.Remove this pan from flame.
6.Take another  pan and put on the flame and add 2 spoons of oil when pan is heated.
7.When oil is heated add mustard seeds.fry till they become to splutter.
8.Then add cumin seeds,garlic cloves and dry chilli pieces and fry for 20 seconds.
9.Then add chana dal and fry till they become to golden colour.
10.Then add ground nuts and fry till they change into dark shade.
11.Then add curry leaves and add spitted green chillies and fried lady  finger pieces.
12.Add turmeric,salt and red chilli powder.
13.Mix all well.Taste if salt and spicy is enough or not.If not then add some more salt and red chilli powder.
14.After adding red chilli powder do not fry for long time.Because red chilli powder change the colour of the fry or vegetable pieces.
15.This is  very suitable dish to eat with pappu charu or sambar or any dal varities.....Enjoy.!


Keep in the  mind


Adding onion and  coconut is optional.
If we like, add sliced onion pieces and fry  them well then add fried lady finger pieces.
Finally add grated coconut pieces.
We can add cashew nuts in the place of ground nut also.
There is no need to add more oil for deep fry.
Add only 5 to 6 spoons of oil then add only few lady finger pieces.
When pieces fried well remove them add some more pieces in the same oil.For all pieces in the same oil.

Amaranthus Tomato recipe

This recipe is normal one .Making this curry with tender amaranthus leaves is best for good taste.Adding tomatoes gives little bit sourness to the curry.Some people feels that eating amaranthus(thotakura ) is equal to eating grass.They do not like to eat plain amaranthus that type of  persons may like to  eat this recipe because of adding tomatoes and   more garlic cloves.

Ingredients



amaranthus leaves 2 cups
tomato 2
onion 1
green chillies 3
oil 1 spoon
mustard seeds 1/4 spoon
cumin seeds 1/4 spoon
chanda dal 1/2 spoon
curry leaves few
turmeric pinch
salt to taste
red chiili powder 1/2 spoon
dry chillies 2
garlic cloves 5


 Preparation


Wash amaranthus with water and soak in salt added water for 20 minutes.
Then cut amaranthus into small pieces.
Take a cooking vessel and add amaranthus leaves pieces and 2 cups of water,1/4 spoon of salt and cook till amaranthus become tender.
Wash tomatoes,onion and green chillies and cut into small pieces.
Remove layer of garlic cloves.

Method


1.Take a cooking vessel or kadai.Put it on the flame.
2.When kadai is heated add oil.
3.When oil is heated  then add mustard seeds.When mustard seeds started to splutter then add dry chilli pieces and cumin seeds and fry for 1 minute.
4.Add chana dal and fry till dal become golden colour.
5.Then add garlic cloves and fry for 1 minute.
6.Add curry leaves.Immediately add finely chopped onion and green chilli pieces.
7.fry for 4 to 5 minutes in low or medium flame.
8.Add tomatoes.saute it.
9.Take a mixing bowl and add boiled amaranthus pieces,salt,turmeric,and red chilli power and mix all well.
10.Add this in to the curry when tomtoes are semi cooked.
11.Stir well.and fry for 5 minutes.
12.Taste the curry if salt is enough or not.
13.If not add some more salt and saute the curry and put off the flame.
14.Amaranthus tomato fry is ready to eat with steam rice....Enjoy..

Keep in the mind


Take special care to when you wash green leaf vegetables.Compulsory soak in crystal salt added water for 15 to 20 minutes.
Adding tomatoes are option.
Be careful when frying garlic cloves.they may be splutter and jumped up from the oil if not remove the layer properly or  not crushed correctly.

Garlic Beans Masala Fry

 Broad beans vegetable is famous in india especially in andhra.It is use to make many  variety recipes like tomato beans gravy curry,potato beans fry,cauliflower beans, and adding in mixed veggie curries and vegetble pulao also.It is packed of full nutrients and fiber content that very useful to increase our health and removes constipation.Beans seeds have full of protein that very essential one for  growing children.Do like this spicy curry  to eat all memebers of family even beans hater also.... 

Ingredients


beans 1/4 kg
onion 1
green chillies 4
oil 1 spoon
mustard seeds 1/4 spoon
dry chillies 2
cumin seeds 2 spoons
chana dal 1/2 spoon
urad dal 1/2 spoon
curry leaves few
garlic cloves 15
turmeric 1/4  spoon
salt to taste
red chilli powder 1/2 spoon
grated coconut 3 spoons


Preparation


Wash Indian broad beans with water and remove the  thin fiber along both sides of beans.And cut the beans into 2 small pieces.If bean is small in size do not need to cut into 2 pieces.
After that take a cooking vessel and add beans and 2 cups of water and 1/2 spoon salt and keep boiling till beans become tender.
After that drain the water and keep them aside.
Remove upper layer of  garlic(optional).
Take mixie jar add garlic cloves,red chilli powder,1 spoon of cumin seeds,1/4 spoon of salt and make a fine mixture.
Wash onions and green chillies and cut them into small pieces.

Method


1.Take a thick bottom vessel or kadai and put on the flame.
2.When vessel is heated add oil.
3.When oil is heated add mustard seeds.
4.When they started splutter then add cumin seeds and dry chillies and fry for 1 minute.
5.Then add urad dal(splitted urad dal) and chana dal.fry till  dals become golden colour.
6.Add  curry leaves.
7.After that add finely chopped onion and green chillies.
8.Fry till they become to light golden colour.
9.Then add boiled broad beans.
10.Add turmeric,some more salt and saute and fry for 5 minutes.
11.Then add garlic  and red chilli powder mixture and mix well.
12.After 5 minutes taste the fry if salt is enough or not.
13.If not add some more salt.
14.Finally add grated coconut and fry for 2 minutes then  put off the  flame.
15.Indian broad beans fry is ready to eat with steam rice.enjoy.....

Keep in the mind


Adding ginger garlic paste is optional.It gives the routine flavour to every recipe.
Adding crushed or mashed mixture of garlic and red chilli powder and cumin seeds gives different taste and aroma to the curry.
Adding grated coconut is optional.If coconut is not available at the time of preparation no need to worry.You can prepare with out grated coconut there is no change of taste of fry.
Do not for get to add salt at the time of boiling beans.

green chilles 5
oil 2 spoons
mustard seeds 1/4 spoon
garlic cloves 5
cumin seeds 1/4 spoon
urad dal 1/4 spoon
cashew nuts 10
curry leaves some
turmeric pinch
salt to taste
red chilli powder 1 spoon
garam masala 1 spoon
ginger garlic paste 1/2 spoon


Method

wash beetroot with plenty  of water because beetroot is a root vegetable.
peel the beet roots  and cut  into small pieces.you can grate beet root also.
cut onions and green chillies into small pieces.
1.add oil in a pan.
2.after heating the oil add mustard seeds .
3.when started to crackle add cumin seeds and garlic cloves.
4.add urad dal and cashew nuts.when they change their colour into light golden add curry leaves.
5.add onion and green chillies pieces and fry for 5 minutes.
6.when onions fried well add  ginger garlic paste and fry for 1 minute.
7.then add beet root pieces and fry for some time.
8.add turmeric,salt and red chillie  powder and fry until beet root  pieces become tender.(fried well).
9.finally add garam masala and put off the flame.

Method
wash potatoes with water and peel the upper layer of potatoes.
1.cut potatoes into small pieces and put in salt water.
2.add oil in a pan .
3.after heating the oil add potato pieces which are drain from water.
4.put high flame for 2 minutes.
5.this is not deep fry.this is shallow fry.
6.put the flame in low.
7.fry till potatoes become dark golden colour.
8.add turmeric,salt and red chillie powder and mix all very well.
9.put off the flame.serve hot.

Method

clean vegetables
chopped onions and green chillies into small pieces.
1.cut cluster beans into inch size pieces.
2.add 1/2 cup of water and some salt. boil for some time.
3.when cluster bean pieces became soft put off the flame.strain them.keep it aside.
4.add oil in a pan.
5.after heating the oil add mustard seeds.
6.when mustard seeds starts crackling add cumin seeds and dry chilles.
7.after that add urad dal and chana dal.fry until dals become light brown colour.
8.add curry leaves.
9.add finely chopped onions and green chillies.
10.fry until onion pieces become light golden colour.
11.then add boiled cluster beans.
12.add turmeric and salt and fry for some time.
13.add red chillie powder ,cumin seeds(1 spoon) and garlic cloves in a mixie jar and make a powder .donot add water.because of garlic this powder looks like paste.but do not need to add water.
14. add this powder  into curry and stir very well . and cook for 10 to 15 minutes.
15.add grated coconut and stir the curry and fry for 2 minutes then put off the flame.

Carrot Potato fry

carrots                 2
potatoes              2
oil                       2 spoons
mustard seeds     1/4 spoon
cumin  seeds       1/4 spoon
curry leaves        some
green chillies      4
turmaric              pinch
salt                      to taste
garam masala     1 spoon


Method

peel the carrot and cut into small pieces.add some water(1/2 cup)and pinch of salt and cook for 5 minutes in low flame.
peel the potatoes and cut into small pieces. keep this potato pieces into salt water.
cut green chillies into small pieces.
1.heat oil in a pan.
2.after heating the oil add mustard seeds .when bagan to splutter add cumin seeds.
3.frying the cumin seeds add curry leaves add green chillie pieces.
4.after that add potato pieces .mix all very well and put lid for 5 minutes.
5.cook in a low flame.
6.after that add semi boiled carrot pieces(donot add water).
7.add turmeric and salt and fry for another 5 minutes.
8.finally add garam masala and mix all very well.
9.if you  like add coriander leaves.put off the flame.serve hot.

Yam fry కంద వేపుడు

This is not deep fry dish .for health conscious  preparing this fry in  low amount of oil.

ingredients

elephant yam          1/4kg
onion                       2
green chillies           3
ginger garlic paste   2spoons
turmaric                 1/2spoon
red chillie powder  1spoon
salt                          to taste
oil                           3spoons
garam masala         1spoon
cashew nut              10
curry leaves            some
coriander leaves     some

Method

1.clean the yam neatly and peel it .
2.cut into your require size.
3.add turmaric ,red chillie powder, ginger garlic paste, salt in yam pieces and mix well.
4. add 3spoons of water.put in the pressure cooker in medium flame(dont put in the high flame) cooker until 2 whistles come(about 10 to 15 minutes).
5.cut  onions and green chillies finely.
6. add oil in a pan. 
7.after heating the oil add cashew nuts .after frying the cashew nut keep them aside.
8.add curry leaves in the same oil and fry for a  while .keep them aside. adding fryied  curry leaves gives some non veg taste to the fry.
8. add finely chopped onions and green chillies.
9.fry until  onion pieces become to golden brown colour .
10.add 1spoon ginger garlic paste,some salt,pinch of turmaric(gives good colour to the curry).fry for 2minutes.
11.then add yam pieces(cooked) and garam masala.mix very well.cook for 5minutes.
12.finally add coriander leaves ,fried curry leaves and cashew nuts.
