This dish is very famous in andhra.It is one of the andhra pradesh favourite food items.This dish is not new admission in our kitchen school it is very old student in our traditional recipe college.My grand mother oftenly prepare this rasam very easy.Do not need to add more ingredients also.we can make this one very quickly and easy .
Some people do not like to eat curd with rice(plain curd) like my son.They feel some alergy to smell the curd which is coming from plain curd.But adding seasonings and mixing with red chilli powder and salt gives good aroma to this curd recipe.Adding turmeric gives bright colour too.Of course turmeric is a natural food colour.So this rasam looks good and taste is delicious.So children or any one who does not like to eat plain curd will definitely like this rasam.. and get their body all benefits of curd.
Ingredients
Curd | 1 cup |
onions | 1 |
green chillies | 2 |
turmeric | pinch |
salt | to taste |
red chilli powder | 1/4 spoon |
water | 1/4 cup |
oil | 1/2 spoon |
mustard seeds | 1/2tb |
fenu greek seeds | pinch |
dry chillies | 1 |
cumin seeds | 1tsp |
urad dal | 1tsp |
curry leaves | few |
preparation
Wash onions and green chillies with water.
Cut the onion and green chillies into small pieces.
Creamy and sweet curd is best to prepare this one.First beat the curd with beater very well.
Method
1.Take a mixing bowl.Add curd,onion and green chilli pieces,salt ,turmeric, red chilli powder and water.
2.Mix all very well.Taste it if salt and spiciness enough or not.
3.If you want more salt and spiciness add salt and red chilli powder.
4.Take a pan and put on the flame.
5.After heatinh the pan add oil .
6.when oil is heated add fenugreek seeds.fry for 1 minute.
7.Then add mustard seeds .when they started to crackle add dry chillie and cumin seeds.saute for 20 seconds.
8.Add urad dal and fry till it turn into golden colour.
9.Finally add curry leaves and put off the flame.keep to cool .
10.After that add these seasonings to perugu charu and mix all well.
11.Traditional andhra special perugu charu is ready .....enjoy this eating with rice (not hot rice) or chapti ...
Keep in the mind
Fresh curd is gives good taste to this dish.Creamy curd is preferable.
You should beat the curd well with beater or blend it.
Do not add hot seasonings to perugu charu.
Hotness may be spoils the curd nature.
Adding fenugreek seeds is optional because we should fry them properly otherwise fenugreek seeds can gives bitter nature.
Do not avoid to eat curd regularly.
