Ingredients
Basmathi rice | 1 cup |

ginger garlic paste | 1 spoon |
mint leaves | 5 spoons |
coriander leaves | 5 spoons |
curd | 1/4 cup |
salt | to taste |
Preparation
Wash basmati rice with water.Drain the water complelely and keep it aside.
Wash all vegetables with water.Better to put them in crystal salt water for 15 minutes.
Cut onions into long pieces(sliced the onions) .
Split green chillies into two pieces.
Soak green peas in the water.
Peel the carrot and cut into small pieces.
Wash mint leaves with water.and keep it aside.
Wash coriander leaves with water and cut into small pieces or only seperate coriander leaves(not stem) .keep them aside
Skim the curd with skimmer.
Cut coconut into pieces.wash with water.after that put the coconut pieces in a mixie jar and add 1 glass of water and make a fine paste. Paste should be in smooth.
Put a vessel on the stove.and add 1 glass of water.and boil it .After water is starting to boil leave it for 5 minutes then put off the flame.
Add this water in coconut paste and mix all well.keep it aside for 10 minutes.Put a sieve in a blowl and pour this mixture.Squeeze the remaining coconut paste which is in the sieve .
Measure this coconut water .We need 1 1/2 glass of coconut milk for 1 glass of basmati rice .The ratio of rice and coconut water is 1:1.5.
Method
1.Take a thin kadai or vessel .We can use pressure pan also which one have thin bottom.
2.Put the thin vessel on the flame.
4.When ghee is melted add seasoning masala ingredients (cloves,elachi,cinnamon,bay leaf ,).Fry for 1 minute
5.Add onion and green chilli pieces and fry till onion pieces turn into golden colour.Then add ginger garlic paste.fry for 1 minute.
6.Then add mint leaves and fry for 2 minutes.
7.Add carrot pieces and green peas and stir well and keep to fry till carrot pieces become tender.
8.After cooking the carrot and green peas add skimmed curd and mix all well. fry for 1 minute.
9.Then add coconut milk and salt to taste.
10.Taste the coconut water .water should be salty that means salt is enough .if not add more salt . leave to boil the water.
11.When water is boiling add washed and drained basmati rice and stir well.keep the flame in medium for 2 to 5 minutes.
12.After that put the flame low and stir the rice. Taste the rice if salt is enough or not .
13.Put the lid and keep cooking till rice become soft and coconut water completely absorbed by the rice.
14.Finally add coriander leaves and put off the flame.
15.tasty and enery giving coconut rice is ready to taste.
16. Kurma or paneer curry or prawn curry is the best combination to eat with coconut rice .
17.We can also enjoy plain coconut rice without adding any curry or raita.
Keep in the mind
This is one of the delicious rice variety .But it will take more time for preparation of this recipe than cooking session.
Coconut milk is very nutritional and energy giving ingredient .Children can eat this food for gaining more calories and enery.Weight loss treatment people better to avoid this type of recipes.
There is no problem if we are preparing this type of recipes occassionally .This is not suitable item for regular dish.
Adding ghee also gives more calories .Mint and coriander increases the digestion but adding masala can cause of gastric problem.
Using basamathi rice also increases the taste of recipes than using ordinary rice.
