Yellow Curd rasam Lakshmi Charu

This dish is very famous in andhra.It is one of the andhra pradesh favourite food items.This dish is not new admission in our kitchen school it is very old student in our traditional recipe college.My grand mother oftenly prepare this rasam very easy.Do not need to add  more  ingredients also.we can make this one very quickly  and easy .
Some people do not like to eat curd with rice(plain curd) like my son.They feel some alergy to smell the curd which is coming from plain curd.But adding seasonings and mixing with red chilli powder and salt gives good aroma to this curd recipe.Adding turmeric gives bright colour too.Of course turmeric is a natural food colour.So this rasam looks good and taste is delicious.So children or any one who does not like to eat plain curd will definitely like this rasam.. and get their body all benefits of curd.

South indian sambar

sambar





This sambar is one of the south indians favourite dish.It is very good combination eating with rice.Some people like to prepare  this sambar every day in their houses.Children also like to eat this one .This sambar is totally different from tiffin sambar.we prepare rice sambar with tur dal as main ingredient .In tiffin sambar we use tur dal and chana dal .Here chana dal is main ingredient.Ofcourse both sambars are very tasty items.

red gram dal 1 cup
tamarind 3 flakes
tomatoes 2
onion  4 small size
green chillies 3
carrot 1
ridge gourd 10 mediucm size pieces
drumstick 5 pieces
bringal 2
turmeric pinch
salt to taste
red chillie powder 1 spoon
jaggery small piece
curry leaves some
coriander leaves some
oil 1 spoon
ghee 1 spoon
mustard seeds 1/4 spoon
cumin seeds 1.4  spoon
garlic cloves 5
dry chillies 2
asefodila pinch

Horse gram rasam ulava charu ఉలవ చారు

Ingredients

horsegram            1 kg
tamarind                small lemon size
salt                        to taste
turmeric                1 spoon
red chilli powder   some
oil                          3spoons
mustard seeds       1/2 spoon
cumin                    1/2 spoon
curry leaves           some

Method

1.soak horsegram for one full night or 12 hours.
2.add 4 glasses of water in horse gram put  in the pressure cooker.cook until 10 whistles come.
3.then put  in the  low flame and cook for 20 minutes.
4.extract juice from cooked horse gram.
5.take some horse(1/2cup) grams make some paste(grind in the mixie).
6.add this paste to horse gram juice for increasing the thickness of rasam.
7.add tamarind(if you like add only tamarind juice) ,turmeric,salt ,red chillie powder and some curry leaves to horse gram juice .cook for until 4 glasses of juice become to 2 glasses.
8.add oil in a pan .
9.after heating the oil add mustard seeds .
10.when began to splutter add cumin seeds and curry leaves. add these all in to horse gram rasam.
11.add salt and red chilli powder as per your taste.
12.you can add coriander leaves.

Tomato rasam టమాటో రసం

Ingredients

riped tomatoes              1/2kg
tamarind                        4 to 5 flakes
red chillies                     3
turmaric                         pinch
salt                                 to taste
curry leaves                   some
oil                                  2spoons
mustard seeds               1/2spoon
cumin                            1/2spoon
urad dal                         1/2spoon
coriander leaves            some for rasam powder

coriander seeds          4spoons
fenugreek                   1/2spoon
pepper seeds              1/2spoon
cumin                         1/2spoon
garlic cloves               5
chana dal                    1/4spoon
red gram dal               2spoons

grind all ingredients to make rasam powder.

Method

put tomatoes in a salt water for 20minutes to removing chemicals.
after that wash them.
cut tomatoes into 4pieces.
add tamarind ,tomato pieces in a mixie jar and grind them to  make tomato juice.
in tomato juice add 2 glass of water,turmaric,salt ,red chillies (2),curry leaves and boil for 20minutes in a low flame.

when rasam is boiling add rasam powder and cook for 5minutes .
add coriander  leaves.put off the flame.
add oil in a pan
after heating the oil add mustard seeds ,red chillies,cumin seeds,urad dal and curry leaves.
after frying all these add to tomato rasam. add salt to taste.


Mysore rasam పప్పు రసం

ingredients
red gram dal         1cup(100grs)
tamarind               small lemon size
 riped tomatoes    2
red chillies           3
turmaric               pinch
salt                       1spoon(to taste)
curry  leaves         some
oil                        2spoons
mustard seeds      1/2spoon
cumin                   1/2spoon

for powder

coriander            3spoons
pepper seeds      1/4spoon
fenugreek           1/4spoon
cumin seeds        1/2spoon
garlic cloves        6

grind these ingredients make rasam power.


1.soak tamarind for 15minutes.
2.soak red gram dal for 30minutes.because soaked dal gives easy digestion and doesnot cause of any gastric problems.
3.after that add 3cups of water in dal and cook.(better to cook in pressure cooker that gives smooth paste).
4.add  2 to 3cups of water in soaked tamarind and extract juicefrom tamarind pulp
5.cut tomatoes small pieces .
6.add tomato pieces,tamarind juice,salt,turmaric,red chillies and curry leaves to cooked dal.
7.mix all ingredients and boil for 15 to 20 minutes in low flame.
8.when rasam is boiling add grinded rasam  powder and stir very well.
9.boil rasam for 5minutes.
10.add 1spoon of oil or ghee in a pan.
11.after heating the oil add mustard seeds,red chillie,cumin seeds and curryleaves
12. put off the flame.add into rasam .if want add more salt .

sambar Idle

 we know Idle and sambar is a special pair to make our break fast  delicious . This sambar(idle) is different from  sambar(rice).preparing of sambar(idle) is take less time and very  cheap compare with sambar(rice) because we use chana dal  in idle sambar (low price) and in rice sambar use redgram  dal(high price).

ingredients

1.red chillies                -4
2.red gram dal             -2spoons
3.chana dal                  -4spoons
4.coriander                  -1/2teaspoon
5.black pepper             -1/4teaspoon 
6.cumin                       -1/2teaspoon
7.coconut (grated)       -1cup
8.tomato                       -2
9.asafotida                    -pinch
10. tamarind                 -1flake
11.sugar                        -2spoons
12.oil                            -4spoons
13.mustard oil              -1/2spoon
14.cumin seeds            -1/2spoon
15.curry leaves             -some
16.onion                       -1
17.salt                          -to taste
18. coriander leaves    -some

1.add 2spoons oil in a pan .
2.after oil heated add red chillies  and fry them.
3.when red chillies fried take them in a bowl.
4. add red gram dal and chana dal. stir well .
5.when dals finely fried good smell comes from it .
6.after that add coriander seeds and pepper
7.finally add tomato pieces , coconut pieces or grated coconut and asafoetida.
8.add all fried ingredients in a mixie jar and grind them make a smooth paste(add water).
9.add remaining oil in  a pan .add mustard seeds ,cumin seeds and curry leaves.
10.add onion pieces. when onions are  fried add grinded paste and add salt,sugar and turmaric(pinch).
11.make tamarind soup (tamarind and water) pour 2 to 3glasses of water  and cook for about 15minutes.
12.add salt  and sugar if you want more.
13.finally add coriander leaves and serve .
