Rice Moong dal Upma

This is one of the traditional dish in andhra.My grand mothern used to  prepare this recipe on  saturday night.On saturday nights they did not take dinner .In that place they had  tiffins. In the olden days there were no more varities to prepare tiffins at night or at morning. So they prepare this one very   quickly with daily available ingredients in the kitchen. This is very easy and simple recipe as break fast or evening tiffin.Only few ingredients enough to prepare this one  and preparation time is very less and cooking time may be taken 15 to 20 minutes.But soaking moong dal can  take 15 minutes.

Mysore bonda

This mysore bonda  gives lot of relief from the routine breakfast items like idly,dosa and umpa.Children also like to have it.Ofcouse every one should like this breakfast item.Very easy to prepare but marination takes some time .Even with in 1 hour we will prepare this delicious item .We can prepare this not only as breakfast item but  also in snacks time(evening time) .

Ingredients


all purpose flour 1 cup
rice flour 1/4 cup
cooking soda pinch
salt to taste
cumin seeds 1/4 spoon
green chillies 5
idly batter 1/4 cup
oil for deep fry
curd 1 cup

Preparation

1.wash green chillies with water.then cut into very small pieces.
2.take a bowl . add curd and 1 1/2 cups of water and skim it very well for making butter milk.nearly 1 1/2 to 2 cups of butter milk we need to make mysore bonda batter.
3.take a mixing bowl.add maida(all purpose flour),rice flour,salt,cooking soda,cumin seeds,green chilli pieces and idly batter in that bowl and mix all very well.
4.then add butter milk little by litte in  the mixer for making a bonda batter just like dosa batter.
5.put the lid and marinate for 45 minutes.

Method

1.add oil in a kadai.
2. mix the batter very well.take 1 cup of water in a bowl. wet the hand in that water. then take ball( medium) size batter drop it in the heated  oil .add 5 to 6 bondas at the same time depend upon size of the kadai and quantity of oil.
3.when one side is chage it  colour then turn it to another side.and fry in medium flame.
4.when both sides fried well then put them on paper napkin to absorb excess of oil.
5.tasty mysore bonda is ready to eat...enjoy...


Keep in the mind

1.making bondas you have to  marinate batter minimum 45 minutes.that maringated batter  gives soft and spozy like bondas.you can marinate 1 to 2 hours also to get more soft mysore bajji.
2.once heat the oil in high flame. after that fry bondas in low or medium flame only.because in high flame bondas colour changes immediatly with out frying properly.

Ingredients
potatoes 2
onion 2
green chillies 3
carrot 1
ginger small piece
oil 2 spoons
mustard seeds 1/4 spoon
chana dal 1/2 spoon
curry leaves some
besan 3 spoons



Method
clean onions ,green chillies,carrot and potatoes.
peel potatoes and cut into 4 pieces .
1.add potatoes and some water(1 cup)in a vessel and boil until potatoes become soft.boil in low flame .
when potatoes are cooked, strain from water.and cut into small pieces.
2.chopped onions,green chillies,ginger and carrot finely.
3.add oil in a pan.
after heating the oil add mustard seeds.
4.when mustard seeds started to crackling add chanadal .
5.when chana dal turn into light golden colour add ginger pieces.and fry for 1minute.
6.add curry leaves.
7.add onions and green chilie pieces.fry until onion pieces turn into golden colour.
8.add carrot pieces and boiled potato pieces.
9.add salt and turmeric.mix very well.
10.cook for 15minutes.
11.add besan in a bowl.add 1cup of water in that bowl and stir besan and water very well.
12.add this in curry and stir the curry immediately to avoid lumps.
13.cook until curry becoming to  thick.put off the flame
14.iam not adding red chillie powder in this curry.only add green chillies for spicy.you can add more green chillies for more spicy.
adding red chillie powder can chage the colour of the curry.the curry should be in light yellow or light cream colour(besan  colour)

salt to  taste

wheat rava upma గోధుమ రవ్వ ఉప్మా

Ingredients

wheat ravva        1cup
oil                       1 spoon
ghee                    1 spoon
mustard seeds     1/4 spoon
urad dal               1/4 spoon
chana dal             1/4 spoon
cashew nuts        6
ginger                  small piece(inch)
green chillies      3
curry leaves       some
onion                 1
carrot                 1(small)
salt                     to taste
water                 2 cups 

Method

1.cut ginger and green chillies into small pieces.cut also onion and carrot in to small pieces.(finely chopped).
2.add oil in a pan.
3.after heating the oil add ghee.when ghee is melted add mustard seeds.
4.when they began to splutter add chana dal and urad dal.fry until dal become light brown colour.
5.add cashew nuts .fry for a while(30 seconds).add ginger and green chillie pieces.fry for 1 minutes.
6.add curry leaves .then add finely chopped onion and carrot.stir well .keep to fry for another 2 minutes .
7.add water and salt.
8.when water is boiling add wheat ravva.stir very well and keep the lid.
9.cook until ravva became soft and water evoparated completly.

Miryala pongali కట్టె పొంగలి

This is tamilian's  traditional dish(pongal), gives lot of relief from routine break fast items like idle,dosa and upma. this is strong diet and has more calories( because of ghee) but nutrients diet for children .If you start day with this tasty break fast makes you energetic throughout the day.

ingredient

rice                       1cup
green gram
(moong dal)         3/4cup
salt                        1spoon(to taste)
pepper seeds       1/2spoon
oil                         4spoons
ghee                      3spoons
mustard seeds     1/4spoon
cumin                   1/4spoon
ginger                   small pieces
green chillies       3
curry leaves         some
cashewnut           10

Method

1. Take rice and green gram in a bowl.wash them twice.
2.  add nearly 5cups of water and  cook in the rice cooker(for make   smooth mixer of rice and dal).
3. take some pepper seeds(half of the quantity) make  into fine powder.
4. eating pepper gives lot of benefit to the body.some people dont like to eat pepper.if we make the powder they can take without any dislike.and also  pepper powder gives some spiciness to the pongal .
5 .cut ginger and green chillies into small pieces.
6. add oil in a pan ,after heating the oil add ghee.
7. when  ghee is melted add mustard seeds,when they began to splutter add cumin ,pepper seeds,cashew nut.
8. when cashew nut turn into golden brown color add ginger and green chilles pieces . after that add curry leaves
9.add rice and  dal mixture,pepper powder.finally add  salt to taste.
serve it hot and have this  with coconut chutney .enjoy eating this delightful recipe .

sambar Idle

 we know Idle and sambar is a special pair to make our break fast  delicious . This sambar(idle) is different from  sambar(rice).preparing of sambar(idle) is take less time and very  cheap compare with sambar(rice) because we use chana dal  in idle sambar (low price) and in rice sambar use redgram  dal(high price).

ingredients

1.red chillies                -4
2.red gram dal             -2spoons
3.chana dal                  -4spoons
4.coriander                  -1/2teaspoon
5.black pepper             -1/4teaspoon 
6.cumin                       -1/2teaspoon
7.coconut (grated)       -1cup
8.tomato                       -2
9.asafotida                    -pinch
10. tamarind                 -1flake
11.sugar                        -2spoons
12.oil                            -4spoons
13.mustard oil              -1/2spoon
14.cumin seeds            -1/2spoon
15.curry leaves             -some
16.onion                       -1
17.salt                          -to taste
18. coriander leaves    -some

1.add 2spoons oil in a pan .
2.after oil heated add red chillies  and fry them.
3.when red chillies fried take them in a bowl.
4. add red gram dal and chana dal. stir well .
5.when dals finely fried good smell comes from it .
6.after that add coriander seeds and pepper
7.finally add tomato pieces , coconut pieces or grated coconut and asafoetida.
8.add all fried ingredients in a mixie jar and grind them make a smooth paste(add water).
9.add remaining oil in  a pan .add mustard seeds ,cumin seeds and curry leaves.
10.add onion pieces. when onions are  fried add grinded paste and add salt,sugar and turmaric(pinch).
11.make tamarind soup (tamarind and water) pour 2 to 3glasses of water  and cook for about 15minutes.
12.add salt  and sugar if you want more.
13.finally add coriander leaves and serve .

Rava idle

Most of the people prepare idle,dosa and upma for break fast.This rava idle different from normal idle.we can prepare rava idle instantly.there is no need to soak black gram , grind it and leave for some time for fermentation.this  will take long time.
when guest come to house with out sign, we can prepare this tiffin 
item instantly  and looks differently.
ingredients

suji(bombay rava)  -1cup
curd                        -1cup
salt                          -to taste
mustard seeds         -1/2tbspoon
cumin                      -1/2tbspoon
urad dal                   -1/2tbspoon
chana dal                 -1tbspoon
cashew nut             -10
curry leaves            -10
gradted carrot         -4spoons
coriander leaves     -some
oil                           -2spoons  

1. heat oil in a pan add mustard seeds after that add cumin,urad dal     ,chana dal , cashew nut finally  add curry leaves.
2.add suji and stir well. fry for 2minutes .
3.keep suji cool.
4.skim curd very well and add to suji make batter  ( like idle batter) .add salt to taste.
5.if you need add water.
6. apply ghee on idle plates put some grated carrot and coriander         leaves(3leaves) after that  pour batter on idle plates.
7.cook like idle(on steaming).it will take 15-20 minutes.
8.put idle reverse side(carrot and coriander side) on plate .look very beautiful and taste is too good.
8.eat with coconut chutney.
