Dry Fruit Dark Chocolate Recipe

Making chocolates is very easy and interesting recipe for every one.Not only children many people(adults) like to eat chocolate.Eating dark chocolate is very good for health.Dark chocolate controls the stress and good for heart.We all buy at store but if you make this at home that gives lot of satisfaction and happy feeling.


Ingredients


Cocoa powder                 125 grs(1 cup)
cocoa butter                     100 grs(3/4 cup)
powder sugar                  30 grs(1/4 cup)
vanilla extract                  1/4 spoon
dry fruits(nuts)                1/4 cup
ghee                                 1 spoon


Preparation


Fry dry fruits in the ghee until they turn into golden colour.


Method



  • Take a thick bottom vessel and add some water and put on the flame.
  • Place another bowl on the vessel for combining the ingredients correctly.
  • We do not melt the cocoa butter directly.Steaming is important.
  • Put the flame medium to high till water is starting to boil.
  • The bowl also become to heat.
  • Then put the flame medium and add cocoa butter in the bowl.
  • Stir continuously till butter melted.
  • Add cocoa powder,sugar powder,vanilla extract and fried dry fruit pieces and mix all well.
  • When mixture getting to thick then remove the bowl from the steaming vessel and pour the mixture in selected moulds.
  • Keep to cool in the room temperature.
  • Put these moulds in the deep fridge till mixture become strong.
  • Easy and healthy dark chocolate is ready...Enjoy!....



Keep in the mind


Take honey in the place of sugar powder.
Steaming is important.Do not directly boil the butter or cocoa powder.
Adding dry fruits also optional.
With out dry fruits we can make plain dark chocolate that one also very delicious.
We can add coconut oil instead of cocoa butter.

Vegetable Egg Frankie Preparation

Egg frankies or egg rolls is the best food to the children.We can give this as break fast  in the morning time or as snack item in the evening time.Adding semi cooked veggie gives lot of health benefits to their bodies.Eating egg and butter also good for them.For growing children need high calorie diet at the same time that food have to gives strength to their body and bones). I am using wheat flour instead of maida. Wheat flour is best than all purpose flour. We can prepare veg frankies also with out adding egg..That one also good in taste and healthy too....Do not need to cook the veggies for long time.Semi cooked veggies have many nutrients those are essential to our daily needs.

Ingredients




wheat atta 1 cup
salt pinch
oil 2 spoons
onion 1
capsicum 1
carrot 1
green chillies 3
egg 4
salt to taste
pepper powder 3 spoons
coriander powder 1 spoon
coriander leaves few
ginger garlic paste 1 spoon


Preparation


Wash all veggies(onion,green chillies,capsicum,carrot,coriander leaves) and cut into small pieces.
Take a big mixing bowl and add atta,pinch of salt,1/2 spoon of oil and mix well.
Then add water little by little and make a chapati dough.Rest for 20 minutes.
Make chapaties.
Put chapati on heated tawa with out adding oil.
Flip it when one side become to brown dots.
Semi fry the chapaties.
Make ginger garlic paste.
Take a bowl and break 2 eggs and add pinch of salt,some pepper powder,coriander powder and mix all well.

Method



  • Take a pan put on the flame.Add oil and heat it.
  • Add onion pieces and fry for 2 minutes.
  • when onion pieces become to transulent add ginger garlic paste and saute for 1 minute.
  • Add remaining veggie pieces and cook for 5 minutes on medium flame.
  • Add salt,coriander powder,pepper powder and saute for 1 minute.
  • Finally add  finely chopped coriander leaves and put off the flame.
  • Take a tawa and put on the flame.
  • Add one spoon of butter or ghee.
  • Pour the beaten egg  mixture on the tawa when butter is  melted.
  • Add semi cooked veggies on the egg mixture.
  • After 15 seconds place the chapati over the veggies and press it with hand or spatula.
  •  Add one spoon of oil if necessary(optional).
  • Flip up the chapati and fry for 1 to 2 minutes and remove from the flame.
  • Very delicious vegetable egg frankies ready to eat with tomato sauce.....enjoy!...


Keep in the mind


Add veggie as per your choice.
we can add finely chopped ginger and  garlic in the place of  ginger garlic paste.
We can use maida(all purpose flour)to making chapaties also.
Adding garam masala gives some different taste.If you like more spicy then add it.

Easy Chocolate Cup Cakes Recipe

This is very one of the easy and quickly preparing baking recipe.we do not get more calories like cakes which has high calorie cream and high amount of sugar.Taking this cup cakes at tea time instead of biscuits or any hot item, gives lot of relief from boring and repeating other snack items.If you like to eat low calorie food then decrease the quantity of butter.Adding dry fruits enhance the taste of the recipe.We can eat cup cakes immediately after baking them even no need to add any cream on the top.That is optional.For attracting the children you can add it. 


Ingredients



Butter 250 grs
flour 250 grs
sugar 250 grs
eggs 4
salt pinch
coco powder 2 spoons
baking powder 1/2 spoon
baking soda 1/4 spoon
dry fruit pieces few
milk 1/4 cup( approx)
vanilla extract 1 spoon
muffns paper cups 15 to 20


preparation



  • Take unsalted butter and Keep it at room temperature .
  • Cut the dry fruits into small pieces.
  • sieve the flour.
  • Break the eggs in a bowl and make a fine whisk  with a spoon or a fork.
  • Take a big  mixing bowl and add butter and beat well.Then add sugar, salt and mix well.
  • Then add coco powder,baking soda and baking powder and mix them well.
  • Add flour and mix well and then add beaten egg mixture.
  • Add milk little by little and make a smooth batter.
  • Mix all ingredients very well and avoid forming any lumps.
  • Finally add vanilla essence and dry fruit pieces to the batter.
  • Take a cup cake baking try(muffins mould) and put muffin cups in it.
  • Add batter into muffin paper cups(fill 3/4 only).
  • Heat the oven 350°F .
  • Put the baking try into the oven and keep to bake for 20 to 30 minutes.
  • After that keep the muffin to cool at room temperature.
  • Add chocolate and cream and icing sugar mixing batter over the cup cakes .This is optional......
  • chocolate cup cakes are ready to eat  with hot tea ......Enjoy!....



Keep in the  mind


we can add vanilla essence instead of vanilla extract.
Adding milk is depend upon the batter consistency.
We can add hot water in the place of milk also.
Adding chocolate cream mixture over the cup cakes is optional.
We can add tutti fruity in the place of dry fruits.
Add dry fruits on the top of the cup cake if you like.

Paneer Dum Biryani Preparation

This recipe preparation is just like process of  chicken dum biryani .Any biryani preparation,Marination is very important.Of course marination can take much time to prepare the recipe but that gives awesome taste and paneer pieces can absorb the masalas flavour and every bite of paneer we feel the taste of all ingredients.Adding cream is optional.Sour curd is important ingredient to  this recipe....We can add more veggies as per taste.


Ingredients




paneer 200 grs
basmati rice 250grs
oil 3 spoons
ghee 2 spoons
onion 2
green chillies 5
ginger garlic paste 1 spoon
turmeric pinch
salt to taste
red chilli powder 1 spoon
garam masala 1 spoon
curd 1 cup
mint leaves few
coriander leaves few
coriander powder 1/2 spoon
bay leaf 1
cloves 2
cardomon 2
cinnamon 1 inch 
tomato 1
sugar pinch
cream 1/4 cup
cashew nuts 10
biryani masala 1 spoon



Preparation



Wash onions and cut into long slit pieces.
Take a pan and put on the flame .
Add 1 spoon of oil and heat it.
Add half quantity of onion pieces and fry until it become to  dark golden colour.
Then put them on paper napkins for absorbing excess of oil.
 Wash green chillies and tomato and cut into small pieces.
Cut paneer into your wishing size pieces.
Make ginger garlic paste.
Make garam masala powder.
Make biryani masala powder.
Soak basamati rice for 30 minutes.Take a big mixing bowl and add  creamy curd and skim well.Then add salt,red chilli powder(1/2 spoon),turmeric,mint leaves,coriander  leaves,garam masala,sugar, coriander seed powder,ginger garlic paste,fried onions and biryani masala powder .
Finally add paneer cubes and mix all well.keep to marinate for 1 to 2 hours.
Cook the basmati rice.

Add 1 spoon of oil and salt at the time of water is boiling or before adding rice to boiling water. 
When 80% of  rice is cooked then remove from the flame and drain the excess of water.Rice not to be mushy.


Method




  • Take a thick bottom vessel or pressure cooker and put on the flame.
  • Add oil when vessel is heated.
  • When oil is heated add ghee.
  • Add masala ingredients like cloves,cinnamon,cardomom and bay leaf.
  • Saute it.
  • Add cashew nuts and fry until they become to golden colour.
  • Add onions and green chillies and fry for 2 to 3 minutes.
  • Add tomatoes and cook until they become to mushy.
  • Add some salt,pinch of turmeric and mix well. 
  • Then add marinated paneer and spread it on bottom of the vessel.
  • Then add 80% cooked basmati rice as layer.
  • Add saffron milk(optional) to get nice colour to the biryani.
  • Spread some coriander leaves and 1/2 spoon of  rose water(optional).
  • Add 1/4 cup of water .
  • Put the lid tightly like dum.
  • Put the flame medium for 2  minutes then turn into low for 15 to 20 minutes.
  • Put off the flame.Do not open the lid immediately after swith off the gas.
  • Keep for 20 to 30 minutes then open the lid and  gently mix the rice and paneer and serve with raita or any other gravy curry.
  • Of course without any side dish we can eat this delicious dum biryani....Enjoy !...   

Keep in the mind


We can make this recipe with left over rice also.But should be grainy not mushy..
Marination is very important.Marinate the  paneer pieces  at least for 1 hour.
Adding cream is optional.
If you want to like more spicy then add more red chilli powder,garam masala and other spicy ingredients.
We can use tomato sauce in the place of tomato pieces.Soak the basmati rice  to get long grains structure and  reduce the time of cooking also.

Sweet Sesame Chikki Preparation

Sesame chikki is one of the traditional sweet and well known in south india ,especially in andhra making this sweet as round ball shape and called "Jeedi".In my childhood days I used to buy this one at small shops(baddi kottu). This is healthy sweet for all.Making this recipe with sesame seeds and jaggery gives lot of health benefits to our body.Especially children should eat this sweet that gives calcium and iron for their bone development and brain improvement.


Ingredients



White sesame seeds           100 grs

jaggery                                100 grs
elachi powder(optional)       1/4 spoon
ghee                                     1 spoon
water                                     50 ml

  

Preparation
      

  • Take sesame seeds and remove stones or if any dust particles exists in it.
  •  Mash the jaggery pieces.
  • Make elachi powder.
  • Take a plate and grease with ghee .

Method


  • Take a thick bottom pan and put on the flame.
  • When pan is heated add sesame seeds and roast for some time.
  • Do not need to add oil or ghee.
  • Roast sesame seeds until they give nice aroma and starting to change their colour.
  • Add ghee and mix well. 
  • Put off the flame.
  • Take a thick bottom vessel add water and mashed jaggery pieces .
  • Put this vessel on the flame.
  • When jaggery pieces completely dissolved in the water then filter this water using net.
  • Put this filtered jaggery water on the flame.
  • Put the flame in medium and stir the jaggery syrup.
  • Take a small bowl and add 1/4 cup of water.
  • Add 2 to 3 drops of boiling jaggery syrup in this water.
  • Jaggery syrup drops have to make a ball. 
  • That is the correct constitency of jaggery syrup to make sesame chikki.
  • Put off the flame immediately and add cardomom powder and mix well.
  • Add roasted sesame seeds and mix all well.
  • Spread this sesame jaggery  mixture on the greased plate and flate the mixture using spoon or any rolling pin.
  • Keep to cool it for some time.
  • Cut this chikkies your wishing size and shape,.....

 Keep in the mind


Adding elachi powder is optional.
If you like sugar you can add it instead of jaggery with same quantity.
Add jaggery and sugar(take equal quantity) also.
Adding ghee is also optional.But adding ghee enriches the taste of the sweet.

Egg Fried Rice Preparation(quick n easy way)

This is one of the children favourite recipe.I am preparing this recipe very easy and quick way to prepare with in few minutes with very few ingredients.If you have enough time to prepare this recipe  you can add carrot,capsicum,green peas and finely chopped garlic in the place of ginger garlic paste.


Ingredients




eggs 3
Basmati Rice  1 glass 200mg
 oil 2 spoons
ghee 1 spoon
ginger garlic paste 1/2 spoon
tomato 1
onion 1
green chillies 3
spring onions few
salt to taste
vinegar 1/2 spoon
pepper powder 2 pinches


Preparation



Wash onion,green chillies and tomato and cut into small pieces.
Wash the rice and add 2 glasses of water (double quantity of the rice) and cook and keep to cool.


Method



1.Take a pan,put on the flame.
2.when pan is heated add oil and ghee.
3.When oil is heated add finely chopped onion and green chilli pieces.
4.Fry until onion pieces become to light golden color then add ginger garlic paste and fry for 30 seconds.
5.Add tomato pieces and cook until tomato pieces become to soft.
6.Take a bowl and collect egg yolks and beat well.Add pinch of salt and pepper powder.
7.Add this beaten egg yolks and cook well.
8.When egg yolks fried well then add cooked rice.
9.Add vinegar,salt and pepper powder and mix all well.
10.Keep to cook for 2  minutes.
11.Finely  add chopped spring onions .
12.Taste the rice if salt is enough or not.
13.Add salt and pepper powder according to your taste.
Enjoy..! eating this hot egg fried rice with tomato sauce.....


Keep in the mind



Adding ghee is optional.
If basmati rice is not available do with ordinary white rice also.
Leftover rice also use be used for this recipe.

Egg less Vanilla Sponge Cake

This cake is made with out egg and butter. I am used oil and curd instead of them.There is no change of tasty with out egg and butter. The cake is very delicious and puffy.We will get  very smooth and spongy like texture and flavour also children lovable one..

Ingredients



Maida 1 1/2 cups
sunflower oil 1/2 cup
baking powder 1 spoon
baking soda 1/2 spoon
curd 1 cup
vanilla essence 1/2 spoon 
sugar 3/4 cup

Preparation


Pre heat the oven to 180 degrees C for 10 minutes.
Sieve the flour .
Take a big mixing bowl and add curd and sugar and skim well with using whisk.
Add baking soda and baking powder and beat all well.
Keep to rest for 5  minutes until bubble formed on the surface of the  mixture.
Then add oil and  vanilla essence and mix well.
Finally add finely sieved flour and  mix well with spatula and make a smooth paste.
And pour this paste on greased baking pan.
Place it in pre heated oven and bake for 30 minutes on 180 C until top become to brown colour.
Cake is ready to eat with tea...


 Keep in the mind 


Use smell less oil. and better to use sunflower or olive oil.

Test the cake if it is baked correctly.Pick a tooth pick or knife in the center of the baked cake.If edges of pick or knife do not have any particles of cake indicates that cake is baked well.

Use pressure cooker if you do not have oven....

Pudina(Mint leaves) Rice Recipe

This  recipe is also called green rice recipe...very healthy one because of  adding leafy vegetable  mint leaves.Eating mint leaves we get many health benefits to our body..Preparing this type of recipes we can take high quantity of mint than other mint recipes like mint chutney or mint adding curries.Children may be like this rice because we adding mint paste not leaves.


Ingredients



Mint leaves 1 cup
rice 250 mg
onion 1
red chillies 4
ginger garlic paste 1 spoon
oil 3 spoons
ghee 1 spoon
cloves 3
elachi 1
cinnamon 1 inch piece
cashew nuts 10
soya chuncks few
water 500ml


Preparation



Wash and soak the rice for 20  minutes.
Wash onion,green chillies and mint leaves.
Take a bowl and add glass of water.And put on the flame.Add soya chuncks when water is boiling and put off the flame.leave for 1 minute and after that squeezed out.
Cut onion into long size pieces.
Take a mixie jar and add 2 green chillies and mint leaves and make a fine paste.

Method


1.Take a thick bottom vessel and put on the flame.
2.Add oil when vessel is heated.After that add ghee also.
3.When ghee is melted add cloves,cinnamon and elachi.fry for 30seconds.
4.Add cashew nuts and fry until they become to golden colour.
5.Add onion pieces and green chillies and fry until onions fried well.
6.Add ginger garlic paste and soya chuncks and  saute for 1 minute.
7.Add mint and green chilli paste and fry for another nearly 2 minutes 
8.add water.When water is started to boiling add salt and stir the water.
9.add soaked rice and stir the mixture once.put the lid and cook until rice become soft.
10.Taste the rice if salt is enough or not.
11.Add some more salt if needed.
12.Add  finely chopped coriander leaves(optional)serve hot.....with raita or any spicy curry ......or  enjoy to eat with this mint rice with out any combination also....


Keep in the mind


Adding ghee is optional.but do not worry about adding this small quantity of ghee.
You can add potato pieces and green peas also.
For more spicy add garam masala  powder.
Adding soya chuncks is optional.

Restaurant style Dry Veg Manchurian Recipe

 This dish is one of the  indo chinese recipes.Now a days every one likes this type of dishes.This type of  indo chinese recipes gives some relief from routine menu items.But these are available only on restaurants.Restaurant foods is not hygienic and  will not use quality ingredients. I am not adding any harmful ingredients like ajinomoto,tasting salt.So learn this type of recipes and prepare at home and get applaud from your family members.


Ingredients


cabbage 1 cup
carrot(greated) 1 cup
capsicum 1/4 cup
onion pieces 1/2 cup
beans 1/4 cup
potato 2
corn flour 4 spoons
maida(all purpose flour) 4 spoons
salt to taste
oil  for deep fry
green chilli sause 1 spoon
soya sauce 1/4 spoon
venegar 1/4 spoon
tomato sauce 2 spoons
ginger  small piece
garlic 5 cloves
corn flour 1/2 spoon
onion  1


Preparation


Wash all vegetables in the water and put them in salt adding water for 15 to 20 minutes.
Peel  the potatoes and wash them and cut into 4 to 5 pieces.
Take a cooker or cooking pan add 1 cup of water and potato pieces and cook for 2 whistles or potato pieces become soft.
Cool this pieces and mashed them.
 Cutting is important to make a beautiful veg balls.All veggies should be chopped finely.
cut cabbage into very small pieces.
Cut capsicum also into small pieces.
Cut beans into small pieces.
Cut onions into small pieecs.
Peel the carrot.Grate it.
Take a big mixing bowl and add  finely chopped cabbage,beans,capsicum,onions,grated carrot,green chillie pieces add salt and mix all well.
Add cornflour, maida and mashed potatoes and mix all well.
No need to add water to make the balls(manchurians).Water in the veggies is enough for to make a dough.
Take a small portion from the dough  and make a ball shape with your palm.Do all like this remaining dough.Keep them in a big plate.



Method


1.Take a kadai and put on the flame.
2.After heating the kadai add oil for deep fry.put the flame high.
3.When oil is heated put the flame in medium and place the veggie balls into the oil and fry till they become golden brown colour.
4.After frying the balls place them in  a kitchen tissues added bowl. drain the balls and excess of oil will be absorbed by kitchen tissues. Fry all veggie balls like this.

Dry sauce preparation


1.Put a pan on the stove.After heating the pan add 1 spoon of oil.
2.add finely chopped ginger and  garlic and saute for 1  minute.
3.Add onion pieces and fry for 2 minutes.
4.Then add green chilli sauce ,soya sauce and tomato sauce.and saute for 1minute.
5.Take a 1/2 spoon of corn flour in a small bowl add 1/4 cup of water and mix well.
6.Add this corn starch and,salt and  mix all well.keep to  fry for 2 minutes.
7.Then add fried veggie balls and saute for 1minute.Put off the flame.
Restaurant style dry veg  manchuria is ready to eat.enjoy with you children and family members....


Keep in the mind


Boiled and mashed potatoes gives binding nature to the balls.Of course we adding corn flour and maida for binding But mashed potatoes not allow the balls to break easily.
If you want spicy veg balls you can add green chillies. and in sauce preparation add more  green chill sauce or red chilli sauce .
Frying the veg balls is very important.Do not put the flame high.At starting put on medium flame then after put low flame.
Should use kitchen tissues to absorb excess of oil from the balls.
Do not use single drop of water to make a veg balls.

This mysore bonda  gives lot of relief from the routine breakfast items like idly,dosa and umpa.Children also like to have it.Ofcouse every one should like this breakfast item.Very easy to prepare but marination takes some time .Even with in 1 hour we will prepare this delicious item .We can prepare this not only as breakfast item but  also in snacks time(evening time) .

Ingredients


all purpose flour 1 cup
rice flour 1/4 cup
cooking soda pinch
salt to taste
cumin seeds 1/4 spoon
green chillies 5
idly batter 1/4 cup
oil for deep fry
curd 1 cup

Preparation

1.wash green chillies with water.then cut into very small pieces.
2.take a bowl . add curd and 1 1/2 cups of water and skim it very well for making butter milk.nearly 1 1/2 to 2 cups of butter milk we need to make mysore bonda batter.
3.take a mixing bowl.add maida(all purpose flour),rice flour,salt,cooking soda,cumin seeds,green chilli pieces and idly batter in that bowl and mix all very well.
4.then add butter milk little by litte in  the mixer for making a bonda batter just like dosa batter.
5.put the lid and marinate for 45 minutes.

Method

1.add oil in a kadai.
2. mix the batter very well.take 1 cup of water in a bowl. wet the hand in that water. then take ball( medium) size batter drop it in the heated  oil .add 5 to 6 bondas at the same time depend upon size of the kadai and quantity of oil.
3.when one side is chage it  colour then turn it to another side.and fry in medium flame.
4.when both sides fried well then put them on paper napkin to absorb excess of oil.
5.tasty mysore bonda is ready to eat...enjoy...


Keep in the mind

1.making bondas you have to  marinate batter minimum 45 minutes.that maringated batter  gives soft and spozy like bondas.you can marinate 1 to 2 hours also to get more soft mysore bajji.
2.once heat the oil in high flame. after that fry bondas in low or medium flame only.because in high flame bondas colour changes immediatly with out frying properly.

This is one of the famous paneer varity.Adding the capsicum gives not only helps to increase the taste of the curry, very good for health of the body also.This type of  curries gives some relief from normal  and traditional dishes.We can make this curry at home like restaurent style.



Ingredients


paneer pieces 1cup
tomato 1
capsicum 4
onion 1 medium size
green chillies 3
ginger garlic paste 1 spoon
turmeric pinch
red chillie powder 1 spoon
salt to taste
garam masala 1 spoon
oil  3 spoons



Preparation



Wash the vegetable with water and put them in the salt water for 15 minutes.
cut onions and red chillies into small pieces
cut capsicum into medium size pieces(your wishing size) or paneer piece size is best.
cut tomato into 5 to 6 pieces.
Make the ginger garlic paste.
Make the garam masala to add all spicy ingredients(cloves,elachi,coriander,poppy seeds,cinnamon,star anise,long pepper) in a blender and make a fine powder.

Method

1.add  oil in a pan.
2.after heating the oil add onions and redchilli pieces and fry for some time.
3.when onion pieces turn into golden colour add ginger garlic paste.
4.fry for one minutes then add tomato pieces(optional) and capsicum pieces.
5.add turmeric,salt and mix the curry ,cook for some time.
6.when water is coming from capsicum add red chillie powder ,stir the curry and cook until water is evaporated.
7.put paneer pieces in hot water. and immediately strained from water .keep aside.
8.we can add fried paneer also. fried paneer gives different taste .add oil(1 spoon) in a pan .after heating the oil add paneer pieces and fry until they ready to become into light brown colour. 
8.add paneer pieces (fried or strain) in capsicum pieces .
9.fry for 3 minutes and add garam masala.
10.taste the curry if salt is require add some more salt and for spicy add red chilli powder if not enough.
11.mix very well .put off the  flame .
12.better to eat hot with roties.
13.we can eat this curry like snacks with out roti or rice.
14.children should  like this recipe.



Keep in the mind

We can add paneer with out fring them.Add paneer pieces with in hot water and put for 2  minutes and drain from the water.Add this paneer pieces in the curry.
Many people especially children does not like capsicum one of the healthy benefits giving vegetable.If you prepare this type of recipes (combination of paneer) children should like to eat capsicum pieces with paneer.
