Gongura Pappu(Sorrel Leaves Dal) Andhra special

This  recipe is very  famous and traditional one in andhra.We can say gongura is 'The king of green leaf vegetables'. Andhra is very famous for gongura(sorrel leaves).We can prepare many varities using it(sorrel leaves).If we think about gongura ,immediately andhra pradesh name is blinks in our mind.Because andhra is very famous for gongura.....like north india  is famous for roties,tamil nadu is famous for idli sambar...kearala is famous for coconut oil recipes...

Ingredients



sorrel leaves 200grs 
onion 1
green chillies 5
tamarind 1 flake
salt to taste
turmeric 1/4 spoon
red chilli powder 1 spoon
tur dal 75 grs
oil 2 spoons
ghee 1 spoon
mustard seeds 1/4 spoon
cumin seeds 1/4 spoon
dry chillies 2
garlic cloves 5
curry leaves few



Preparation


Wash tur dal with the water then soak them for 30 minutes.
Wash sorrel leaves in the water(add 1 spoon of crystal salt in that water).Better to soak for 20 minutes in that water.
Wash onion and green chillies and cut the onions and green chillies into medium size pieces.
Wash curry leaves and keep aside.
Remove layer of garlic cloves.


Method


1.Take a pressure cooker and add soaked tur dal and 2 cups of water and cook for 2 whistles.
2.After pressure is completely coming out then open the cooker lid. And mash the dal(coarsely). 3.Take a cooking vessel and add sorrel leaves,onion and green chilli pieces,salt,turmeric,tamarind flake and 3 cups of water and cook till sorrel leaves become so tender.
4.Add coarsely mashed dal and mix all well.
5.Add red chilli powder and cook for 5 minutes.
6.Taste the dal if salt is enough or not.If not add some more salt and mix well.Put off the flame.
7.Take a thick bottom vessel or kadai and put on the flame.
8.Add oil when kadai is heated.
9.After oil is heated add ghee.
10.Add mustard seeds when ghee is melted.
11.Fry mustard seeds when they started to splutter.Then add dry chillies and crashed garlic cloves and fry till garlic cloves turns into brown colour.
12.Add cumin seeds and fry for 5 seconds and  add curry leaves and put off the flame.
13.Add these seasonings to sorrel leaves dal and mix all well.
14.Andhra special sorrel leaves dal is ready to eat with steam rice...Enjoy!....



Keep in the mind


Take special care when we wash the sorrel leaves.Sorrel leaves may have worms.So take care when you add any green leaves to the curry.
Some people like to add tomato also.If you like add tomato and avoid tamarind flakes.
There is one easy and simple step to prepare any dal varities.
Add all ingredients (except salt and tamarind) into the pressure cooker and add water and cook for 3 to 4 whistes.When the pressure is completely coming out from the cooker then open the lid and add salt and tamaind flakes and cook for 2 mintues.Finally add seasoning to this dal.This is very easy dal preparation.But follow this preparation if you do not have enough time to prepare this recipe.

Ridge gourd tur dal recipe Andhra style

We know many dal varities like tomato dalspinach dalThotakura papapu etc.This ridge gourd tur dal recipe is good in taste like other dal varities.We can add moong dal instead of tur dal if you like.That one also nice taste and gives relief from if we feel boring to add tur dal for dal preparations and adding moong dal also good for health.


Ingredients


ridge gourd 1/4 kg
tur dal 150grs
tamarind 3 flakes
turmeric 1/4 spoon
salt to taste
red chilli powder 1/2 spoon
tomato 1
onion 1
green chillies 2
oil 1/2 spoon
ghee 1/2 spoon
mustard seeds 1/2 spoon
garlic cloves 5
cumin seeds 1/4 spoon
curry leaves few
dry chillies 2
coriander leaves few

Preparation


Wash tur dal with water and soak for 30 minutes.
Wash ridge gourds  with water.And peel them and once again wash with water and cut into small pieces.Before cutting the ridge gourd taste it if it is bitter or not.
Wash onion,green chillies and tomato and keep them in salt adding water for 15 to 20  minutes.
Then cut onions ,green chillies and  tomato into small pieces.
Wash coriander leaves and curry leaves and cut coriander leaves into small pieces and keep them aside.
Remove the layer of the garlic and mash them with chapati roller pin.

Method


1.Take a pressure cooker and add soaked tur dal and 2 cups of water and cook for 3 to 4 whistles.
2.Take a cooking vessel and add ridge gourd pieces,onion pieces,green chillie pieces,tomato pieces,turmeric ,salt,red chilli powder,tamarind flakes and 3 cups of water and cook till veggies become tender.
3.Remove the cooker lid when pressure is completely removed. 
4.Mash the dal and add this to cooking veggies and mix all well.and cook for 10 to 15 minutes.
5.Taste the dal if salt and  sour is enough or not.If not add more salt and lemon juice(1 spoon) if need.
6.Take a pan and put on the flame.
7.After heating the pan add oil.
8.When oil is heated add ghee.
9.When ghee is melted add mustard seeds.
10.When mustard seeds started to crackle add dry chillies and cumin seeds.
11.Fry for 1 minute and add crushed garlic cloves and fry for 1 minute.
12.Finally add curry leaves and coriander leaves and put off the flame.
13.Add this to ridge gourd dal and mix all well.
14.This curry is good combination for rice or chapati.


Keep in the mind

Do not forget to taste  every ridge gourd before cutting it because some ridge gourd has bitter taste.It will spoil the taste of the curry and curry also become bitter.
Adding coriander leaves is optional.
We can add moong dal  instead of tur dal also.
Easy method is also available.Use pressure cooker.Add all ingredients except salt and tamarind and cook for 4 to 5 whistles.
After pressure completely remove from cooker,open it and add salt and tamarind flakes and cook for 10 minutes and if need add 1 cup of water also.finally add seasonings.

Tomato Moong dal

We  like to prepare any dal varities with tur dal or red gram dal.But making with moong dal also gives yammy taste like red gram dal.This is very  good combination  to eat with chapaties or pulkas.Iam adding lemon juice instead of  tamarind.If you do not like to add lemon juice ,you can add tamarind flakes 1 or 2 only .With out adding tamarind or lemon there is no change in the taste. Moong dal  is good for children and also  gives good taste to the recipes.



Ingredients



tomato 4
moong dal 1 cup
onion 1
green chillies 5
lemon  2
turmeric 1/4 spoon
salt to taste
oil 1/2 spoon
ghee 1/2 spoon
mustard seeds 1/4 spoon
dry chillies 2
cumin seeds 1/4 spoon
garlic cloves 5
curry leaves few
asafoetida pinch

Preparation


Add tomatoes ,onions and green chillies in the salt  water for 15 to 20 minutes.
Clean the moongdal(pick all small stones or any small insects).After that Wash moong dal with water and soak for 15 minutes.
Cut tomatoes into small pieces.
Cut onions and green chillies into small pieces.
Remove upper layer of garlic cloves or crush the garlic cloves.
Squeez lemon juice from lemons.keep in the fridge till use in cooking.


Method


1.Take a cooking vessel and add soaked moong dal and  2 cups of water and put on the flame.
2.Do not put the lid completely.when dal is boiling foam coming out from the dal.That may be over flow and  put off the flame if lid covered completely.
3.When dal is cooked add tomato pieces,onion and green chilli pieces,turmeric ,salt and 2 cups of water and cook till tomato pieces become tender and mix with dal very well.
4.Add lemon juice and put off the flame.
5.Put a pan on the flame.add oil when pan is heated.
6.When oil is heated add ghee .
7.After melting the ghee add mustard seeds.
8.When they started to splutter add crushed garlic cloves and fry till become dark colour.
9.Then add cumin seeds and dry chillies and fry for 20 seconds.
10.Finally add asafoetida and curry leaves.and put off the flame.


Simple method


Take a pressure cooker and add all vegetable pieces(tomato,onion,green chillies) and turmeric,soaked moong dal and add 2 cups of water add cook till 3 whistles.
When the pressure is completely  coming out from the cooker then open the lid and add salt and mash the dal with masher.
add seasonings.mix all well.This is very easy method.But it is better to follow when you do not have enough time to prepare this recipe.

Keep in the mind


Soak the moong dal atleast 15 minutes because soaking dals easy to digest and not gives any gastric problems.
Add salt only after dal is completely cooked.If you add salt before cooking  dal it is not cooked the dal completely or smoothly.
Adding lemon juice is optional .You can add tamarind flake also.
Garlic cloves have the nature to splutter in the oil if you doing unproper removing  of upper layer or not crushed well.
Add asafoetida  in any dal varities .asafoetida has the nature to improve  digestion and also gives good aroma to the recipe.

Spinach dal

Ingredients
spinach                  4 bunches
red gram dal          1 cup
tomatoes                 2
tamarind                 4 flakes
onion                      1
green chillies          3
turmeric                  1/4 spoon
salt                         to taste
red chillie powder  1 spoon
oil                           2  spoons
ghee                        1 spoon
mustard seeds         1/4 spoon
cumin seeds            1/4 spoon
garlic cloves           10
dry chillies              2
curry leaves            some


Method

clean the vegetables 
soak red gram dal in water for 30 minutes to avoid gastric problems.because soaked dal easy to digest.
there is also one benefit that is quick to prepare recipe.
cut spinach into pieces(you can cut stem also).
cut onion,tomatoes and green chillies into pieces.
1.after soaking the dal cook in a pressure cooker until 3 to 4 whistles come.
2. take a vessel and add spinach ,tomato pieces ,onion pieces,green chillies pieces,turmeric, tamarind  and water.cook for some time (15 minutes).
3. mash the cooked dal after open the cooker.(donot try to open the cooker lid forcely with out steam coming out completly ).
4.then add mashed dal and mix all very well.cook for a while.
5.then add salt and red chilli powder.
6.when tomatoes and spinach cooked well . taste the dal ,if salt is enough or not.if not add salt.put off the flame.
7.heat oil in a pan.cut dry chillies into two pieces.
8.after heating the pan add mustard seeds.when began to splutter add garlic cloves,dry chilles,cumin seeds.
9.fry until garlic cloves become into dark colour.
10.add asafoetida and curry  leaves.
11. add spinach dal and mix all very well.

Ingredients

red gram dal            1cup
oil                            1 spoon
ghee                         1/2 spoon
mustard seeds          1/4 spoon
cumin seeds             1/4 spoon
garlic cloves             10
red chillies                2
salt                            to taste
turmeric                    pinch
curry leaves              some

Method

1.soak red gram dal for 30 minutes.
2.cook any dal after soaking it that gives speed to cook and  easy to digestion and avoid gastric problems.
3. add oil in a pan .
4.after heating the oil and ghee.
5.add mustard seeds .when began to splutter add red chillies,cumin seeds,garlic cloves and curry leaves.
6.after frying these ingredients add 2 1/2cup water .
7.add turmeric and salt.let it boil.
8.when the water is boiling add soaked red gram dal.
9.put the lid .flame should be in low.
10.cook until dal become soft and water evoparated completly.
