ridge gourd with milk curry

Ingredients

ridge gourd 1/4 kg
onion 1
green chillies 3
oil 2 spoon
mustard seeds 1/4 spoon
cumin seeds 1/4 spoon
garlic cloves 6
urad dal 1/4 spoon
curry leaves some
turmeric pinch
salt to taste
sugar(optional) 1/2tbspoon
raw milk 1/4 cup

Method
clean ridge gourd with water and peel it .
cut into small pieces.every ridge gourd should taste before placing the pieces in a bowl.because some ridge gourd has bitter taste.that one can changes the taste of the curry.so should taste every ridge gourd.
cut onions and green chillies into small pieces.
1.add oil in a pan.
2.after heating the oil add mustard seeds.
3.when mustard seeds started to crackle add cumin seeds.
4.add urad dal and garlic cloves.
5.add curry leaves when urad dal chages its colour.
6.add onions and greenchillie pieces and fry for some time( 2 to 3minutes).
7.after onions are fried add ridge gourd pieces.cook for some time.
8.when water is coming from the ridge gourd pieces add turmeric and salt.mix very well.
9.donot add more salt .only low amount of salt is enough.
10.cook till water is evoparated.add raw milk (optional)and sugar .
11.cook for some time ( 5 minutes).
12.when oil is coming from the curry  put off  the flame.
13.this is very common curry in andhra.not spicy, can eat unhealthy persons also.
