Egg Tomato Gravy Curry

Tomato and egg recipe is very famous in indian kitchen.Every one  likes this recipe.Normally this combination of  recipe prepare very simple adding no masala paste only  cloves and elachi use as seasoning and they added when oil is heated(before adding onion pieces). But this  egg tomato gravy curry is very spicy and looks like kurma and enjoy to eat with roti also.Adding mint leaves and coriander leaves gives nice aroma and increse the taste of  the curry.



Ingredients



eggs 3
onion 1
green chillies 5
tomato 1/4 kg
mint leaves few
ginger garlic paste 1 spoon
turmeric pinch
salt to taste
red chillie powder 1 spoon
cloves 2
elachi 1
cinnamon inch
coriander seeds 1/4 spoon
poppy  seeds 1 spoon
cashew nuts 5
coriander leaves few
oil 1 spoon


Preparation


Put onion,green chillies and tomatoes in salt water for 15 minutes.
After that cut onions into small pieces
Split each green chillies into 2 pieces.
Cut tomatoes into small pieces or grind them and make tomato paste.
Wash mint leaves and coriander leaves with water and cut coriander leaves into small pieces.Keep them aside separately.
Make ginger garlic paste.
Take a mixie jar and add cloves,elachi,coriander seeds and poppy seeds and make a fine powder.Then add cashew nuts and some water to  make a fine paste.
Put eggs in a vessel and add  some water(approx 1/2 lit)water and  salt(1 spoon) and put this vessel on the flame.And boil till eggs are cooked well.Drain the water.Keep them to cool.
Remove the shells of eggs after boiled eggs become to room temperature.


Method


  1. Take a cooking vessel and put on the flame.
  2. Add oil when vessel is heated.
  3. When oil is heated add finely chopped onions and green chillies.fry till onions become golden colour.
  4. Add mint leaves and fry for 2 minutes.
  5. Add ginger garlic paste and fry for 1 minute.
  6. Then add tomato pieces.cook for some time.
  7. Add turmeric,salt ,red chilli powder and mix all well and keep to cook till tomato pieces become tender.
  8. Then add masala paste and stir well.cook for 2 minutes.
  9. Add boiled eggs and 1/4 cup of water and cook till oil in the curry coming out.
  10. Finally add coriander leaves and put off the flame.
  11. This recipes can eat with rice, roti and biryani.

Keep in the mind


Boil the eggs in salt adding water because salt can kills the bacteria which is may be present on egg shells.
Adding mint leaves is optional.
We can add tomato paste instead of cutting tomatoes small pieces.
